Serves 2
Ingredients:
- Chicken tenders โ 250โ300g
- Plain yogurt โ 3 tbsp
- Salt โ 1/3โ1/2 tsp
- Garlic โ 1 clove (or garlic paste)
- Curry powder โ 1 tsp (Japanese twist: swap for miso โ 2 tsp)
- Black pepper โ a pinch
- Oil โ 1 tsp
How to make it:
- Slice chicken tenders diagonally or into bite-sized pieces.
- Mix all marinade ingredients together.
- Place chicken and marinade in a ziplock bag, massage well. Rest 15โ30 min (overnight = extra tender).
- Wipe off excess yogurt, cook in toaster oven or pan until fully cooked through.
โก Japanese Simmered Dish / Nimono (ๅ้ขจ็ ฎ็ฉ)
Serves 2โ3
Ingredients:
- Burdock root (ใใผใ) โ 1/2 stalk
- Daikon โ 1/3 of a large daikon (leaves included!)
- Enoki mushrooms (ใใฎใ) โ 1/2 pack
- Shirataki (็ฝๆป) โ 1 pack
- Dashi pack (ๅบๆฑใใใฏ) โ 1
- Water โ 400ml
- Soy sauce โ 2 tbsp / Mirin โ 2 tbsp / Cooking sake โ 2 tbsp
How to make it:
- Scrub burdock root clean, cut diagonally (ๆใๅใ).
- Cut daikon into large random chunks (ไนฑๅใ). Keep the leaves โ they're delicious!
- Briefly parboil shirataki, then cut into shorter pieces with scissors.
- Add all ingredients to pot. Bring to boil, then simmer on low with lid on for 20โ30 min.
โข Japanese-Style Tofu Salad (่ฑ่ ใตใฉใ)
Serves 2
Ingredients:
- Green leaf lettuce (ใตใใผใฌใฟใน) โ 1/4 head
- Firm tofu (ใใใ่ฑ่ ) โ 1/2 block
- Kimchi โ to taste
- Nori seaweed โ a few sheets
- Kombu tsuyu (ๆๅธใคใ) โ 1โ2 tbsp
- Toasted sesame seeds โ 1 tsp
How to make it:
- Wash lettuce and tear into pieces by hand. Place in bowl.
- Add firm tofu on top, then pile on kimchi.
- Sprinkle sesame seeds and drizzle kombu tsuyu.
- Tear nori by hand and scatter on top. Done!
